Ingredients for this flavorful teff recipe:
1 lemon zest, 2 tbsp lemon juice, 3 tbsp extra virgin olive oil, 1 tbsp chopped parsley, 1 tin chickpeas drained and dried, coarse sea salt, chili peppers dried and thinly chopped, 50g almonds roasted, 60g teff grains cooked, 2 scallions thinly chopped, 150g cherry tomatoes halved and ½ bunch of dandelion greens washed and roughly chopped.
- Put lemon zest, lemon juice, olive oil and parsley into a bowl. Then add the chickpeas, use salt and pepper for flavor and put set aside.
- Now put roasted almonds, teff grains, scallions, tomatoes and dandelion into a second bowl mix ingredients.
- Last but not least, add the marinated chickpeas, stir all ingredients carefully and serve the dish in a soup plate.
