Ingredients you need for the teff-recipe:
1 large summer squash cut into small cubes, 240g teff grains cooked, 200g spinach cooked, 2 scallions thinly chopped, ½ mid sized red onion, 3 tbsp lemon juice fresh, 1 tbsp white balsamic vinegar, 1 tbsp lemon zest, 2 tbsp virgin olive oil, 1 large lettuce, ½ tsp sea salt, ¼ fresh black pepper and extra ingredients to garnish your salad the way you like it.
- Take large bowl and fill in summer squash, teff grains, spinach, scallions and onion.
- In a separate small bowl prepare the dressing. Mix lemon juice, balsamic vinegar, lemon zest, olive oil, salt and pepper together and stir all ingredients with a spoon or a whisk.
- Now wash and dry the lettuce and break leaves off it.
- Last but not least, add your extra ingredients and pour the teff dressing over the lettuce leaves.
